Life is busy here on the Wolphaertstraat. We have kids, animals, demanding jobs, full schedules and then suddenly it's almost dinner time again. Every single day.
For me, as a cook, it's not that difficult to throw together a few ingredients and make something that everyone likes—including my children.
Here then, a suuuper easy, tasty, and vegan recipe.
All ingredients can be found at your local supermarket. I personally prefer to go to Yasam, especially for the veggies... then I feel less ripped off than when I go to MCD. However, for that yummiest brand of noodles, it's still best to go to the MCD.
Ingredients (from the Yasam)
Tahini 1/3 cup
1 tablespoon chopped ginger
3 teaspoons cane sugar
3 tablespoons soy sauce
1 clove of garlic
a squeeze of Harissa (or sambal) to your taste
small bowl of toasted sesame seeds for garnish
lime for sprinkling
1 broccoli cut in florets
Ingredients (from the MCD)
rice vinegar
Udon noodles
sesame oil
Blend the tahini, ginger, soy sauce, cane sugar, garlic, and harissa in a small blender or with a hand blender to make a nice smooth sauce. If it is not liquid enough you can add a few tablespoons of water.
Cook the noodles as described on the package. Once cooked, stir in a little sesame oil and set aside.
Fry the broccoli florets over medium-high heat in a wok for 5 minutes until softened and a little browned.
Add the tahini sauce to the pan and gently stir the noodles into the sauce and broccoli. Serve with lime and sesame seeds.
It's that easy.
